This is a the super quick and easy cheat’s version – tastes great and no fuss!

Preheat oven to 220degrees

1kg slab of pork belly.

Score the skin, rub with olive oil and salt flakes.

Take a nice baking dish, pour 1/2 – 3/4 jar of SPC plum sauce in to the bottom

Lay the pork on top skin side up so you get crispy crackling.

Cook at 220degrees for 15 minutes

Turn the oven down to 165/170degrees for 30minutes per 500g (so that would be 1 hour for the 1kg slab of pork belly)

Every 20/30 minutes glaze the skin with the plum sauce and juices from the bottom of the dish

Rest for 10/15minutes before serving

Some serving ideas:

Mashed potato and broccolini

Mashed pumpkin and a salad of avocado, cucumber, parsley, corriander and lime juice

On a salad of watercress, finely sliced red onion, finely sliced apple, walnuts
