Raspberry Yoghurt Muffins

(Makes 12)


2 cups Self Raising Flour

1/4 cup caster sugar

1/4 cup brown sugar

Pinch of cinnamon

1 and 1/3 cups of froze raspberries

1 cup yoghurt

1 egg, lightly beaten

2-3 tablespoons of butter, melted

1/2 cup (125 mls) milk

Pre-heat oven to 190C and grease the muffin tin

Mix flour with sugars, cinnamon and raspberries

In a seperate bowl, combine yoghurt, egg and butter

Add wet ingredients to dry, including milk

Mix lightly, pour into muffin tins and bake in the middle of the oven for 20-25 minutes

Spiced Peach Pies

I had been given a pie machine for my birthday a few years ago and it was time to use it.  Ange had taken me to Aumann Orchards a few weeks back and the produce was amazing.

So we went back and bought a big tray of juicy clingstone peaches to make pie.

The machine suggests using frozen short crust pastry for the base and puff pastry for the top.  Ange made short crust from scratch and though they needed an extra 10 minutes in the normal oven, they had a wonderful shortbread texture with an explosion of hot spicy peaches.

The puff pastry worked really well and I can’t believe we had little pies ready to be eaten in only 6 minutes

To make 12 pies

You will need

3 slices of frozen short crust pastry for the base

3 slices of frozen puff pastry for the lids

5 cups sliced peeled peaches

2 tablespoons lemon juice

1/2 cup all-purpose flour

1 cup white sugar

1/2 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon salt

2 tablespoons butter

Place the sliced peaches in a large bowl, and sprinkle with lemon juice.

Mix gently.

In a separate bowl, mix together the flour, sugar, cinnamon, nutmeg and salt.

Pour over the peaches, and mix gently.

Pour into the pie crust, and dot with butter.

Follow the pie machine instructions

Spray with oil spray lightly

Shortcrust base, fill with peaches, puff pastry lids

Close lid and bake for appropriate time (about 6-8 minutes)


When reheating, place in a 160 oven for 10 mins to warm through
