INGREDIENTS

3 large granny smith apples – peeled and cored

3 brown baking pears – peeled and cored

2 tablespoons of raw sugar

1 heaped tablespoon of cinnamon

150g softened butter

1 cup caster sugar

2 eggs

200mls milk

1 and 2/3 cups of plain flour

2 teaspoons baking powder

1 cup brown sugar

1/2 cup golden syrup

300ml water

METHOD

preheat oven to 180degrees

FRUIT

cut apples and pears roughly into 1cm wide chunks or slices

toss through raw sugar and cinnamon

Fill the baking dish (I use a lasagna dish)

PUDDING BATTER

In a bowl with an electric beater

Cream butter and sugar

Add the eggs, then the milk

Sift in the flour and baking powder

Pour over the apple mix

TOFFEE SYRUP

On the stove in a non-stick pan

Melt brown sugar, golden syrup and 300ml water

Bring to the boil

When all the sugar is dissolved, pour over the pudding batter

Bake until the cake is golden, approx 35minutes

Serve with buttermilk icecream
